Ingredients

100 g bacon, or more to taste
1 large onion, chopped
1 stalk celery, diced
4 cloves garlic, minced
1.5 liters chicken broth
600 g dry black-eyed peas - sorted, rinsed, and drained
0.5 tsp salt
0.25 tsp ground black pepper

Directions

Step 1
In a 5-quart Dutch oven, cook the bacon over medium-high heat until evenly browned and crisp, about 10 minutes. Drain on paper towels and crumble when cool enough to handle.
Step 2
Heat the bacon drippings over medium-high heat. Add onion, celery, and garlic and cook until tender, about 5 minutes. Add chicken broth, black-eyed peas, salt, and pepper. Bring to a boil and skim the top if necessary.
Step 3
Reduce the heat to a simmer. Add the crumbled bacon and adjust salt and pepper to taste. Cover and simmer until peas are tender, 30 minutes to 1 hour, depending on desired tenderness.
