2 kg cauliflower florets
30 ml olive oil
3/4 tsp salt
120 ml cayenne-infused honey (such as Mike’s Hot Honey)
45 ml gochujang (Korean hot pepper paste)
15 ml packed brown sugar
15 ml less-sodium soy sauce
5 ml lemon juice
5 ml minced fresh ginger
1/4 tsp black pepper
2 green onions, sliced (25 g), plus more for garnish
Step 1
Preheat the air fryer to 200°C (400°F) according to the manufacturer’s instructions.
Step 2
In a large bowl, toss the cauliflower florets with oil and 1/2 teaspoon of salt to coat them.
Step 3
Arrange the cauliflower bites in the air fryer basket in an even layer. Cook them in batches if necessary, turning halfway through, until tender and browned, about 10 minutes.
Step 4
While the cauliflower is cooking, make the sauce. In a small saucepan, combine the honey, gochujang, brown sugar, soy sauce, lemon juice, ginger, black pepper, and the remaining 1/4 teaspoon of salt. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer until the sauce is glossy and thickened, about 5 minutes. Stir in the green onions.
Step 5
Transfer the hot cauliflower bites to a large bowl. Add 120 ml of the sauce and toss to coat. Serve immediately with the remaining sauce and garnish with additional green onions.
