450 g all-purpose flour
400 g white sugar
150 g rolled oats
1 tbsp ground cinnamon
2 tsp baking powder
1 tsp salt
350 ml vegetable oil
4 eggs
570 g fresh strawberries, sliced
Step 1
Preheat the oven to 175°C (350°F) and grease two 7x3-inch loaf pans.
Step 2
In a large bowl, combine flour, sugar, 150g rolled oats, cinnamon, baking powder, and salt. In another bowl, whisk together oil and eggs until well combined. Stir the wet ingredients into the flour mixture until just moistened. Gently fold in the sliced strawberries. Pour the batter into the prepared loaf pans and sprinkle the tops with the remaining 25g of rolled oats.
Step 3
Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let the loaves cool in the pans for 5 minutes before transferring to a wire rack to cool completely.
