500 g fresh strawberries, hulled and halved
80 g white sugar
1 teaspoon vanilla extract
Step 1
Start by hulling the strawberries and cutting them in half.
Step 2
In a saucepan over medium-high heat, combine the strawberries, sugar, and vanilla. Cook and stir occasionally until the mixture sizzles and juice begins to form.
Step 3
Continue to stir and mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until the sauce thickens, about 15 minutes. Remove from the heat.
Step 4
Transfer one-third of the strawberry sauce to a blender. Cover and hold the lid down with a potholder while you puree the mixture.
Step 5
Add the pureed mixture back into the remaining sauce and stir until blended.
Step 6
Serve the syrup over a slice of cheesecake.
