Sweet and Spicy Glazed Pork Chops
These pork chops are marinated and cooked in a sweet, sticky, and subtly spicy sauce of brown sugar, garlic, fish sauce, and soy sauce, creating a flavorful and fuss-free dinner option.
110 g light brown sugar
6 cloves garlic, crushed (or more to taste)
60 ml rice vinegar
2 tbsp fish sauce
1 tbsp soy sauce
1 tbsp ketchup
2.5 g freshly ground black pepper
10 ml hot sauce (or to taste)
2 thick-cut bone-in pork chops (about 280 g each)
5 ml vegetable oil
Step 1
In a mixing bowl, combine brown sugar, garlic, rice vinegar, and fish sauce to make the marinade. Add soy sauce, ketchup, black pepper, and hot sauce to the mixture.
Step 2
Pour half of the marinade into a baking dish and place the pork chops on top. Pour the remaining marinade over the pork chops and ensure they are well coated. Cover with plastic wrap and marinate in the refrigerator, flipping the chops every 30 minutes for 1 to 2 hours.

Remove the marinated chops from the baking dish, scraping off any excess marinade.

Heat vegetable oil in a nonstick skillet over medium heat. Add the pork chops and cook for about 5 minutes on each side until the outsides are nicely charred and the meat springs back when lightly prodded. Transfer the cooked chops to a plate to rest.
Step 5
Pour the marinade into the skillet and cook over medium-high heat until it is reduced and sticky, which takes about 3 to 5 minutes. Return the pork chops and any accumulated juices to the skillet.
Step 6
Reduce the heat to medium-low and cook the pork chops, flipping and basting occasionally, until the centers are slightly pink and the sauce reaches the desired stickiness, which takes about 6 to 8 minutes. An instant-read thermometer inserted into the thickest part of the pork should read about 63°C.
Step 7
Place each pork chop on a plate and spoon a portion of the sticky garlic sauce on top.
