60 g shredded coconut
120 ml honey
30 g creamy peanut butter
5 ml vanilla extract

Step 1
Preheat the oven to 165°C (325°F) and grease a 23 cm (9-inch) square baking dish with cooking spray.

Evenly spread the oats and coconut on a baking sheet. Toast in the preheated oven until browned, about 10 minutes. Transfer the toasted oats and coconut to a large mixing bowl.

In a saucepan over medium-low heat, combine the honey, peanut butter, vanilla extract, and salt. Cook and stir until the mixture is smooth.

Pour the honey mixture over the oats and coconut, stirring to coat evenly. Spread the mixture into the prepared baking dish.

Bake in the preheated oven until the bars begin to dry, about 15 minutes for crunchy granola bars, less for chewy ones.

Allow the bars to cool completely before cutting into squares.
