4 medium green bell peppers, tops and seeds removed
1 can (28 oz) tomato sauce
60 ml white vinegar
680 g lean ground beef
240 ml cooked white rice
120 ml Italian-style bread crumbs
90 g grated Parmesan cheese
60 ml finely chopped onion
1 large egg, lightly beaten
2.5 g garlic powder
1.5 g salt
1.5 g black pepper
Step 1
Prepare a large pot of boiling water.
Step 2
Boil the green bell peppers until softened, for about 4 to 5 minutes. Drain and cool under cold water.
Step 3
In a large bowl, combine ground beef, cooked rice, bread crumbs, 4 tablespoons of Parmesan cheese, onion, egg, garlic powder, salt, and black pepper.
Step 4
Preheat the oven to 175°C (350°F). Stuff the peppers with the beef mixture and place them in a baking dish.
Step 5
In a separate bowl, mix the tomato sauce and white vinegar. Pour the mixture over the stuffed peppers.
Step 6
Sprinkle the remaining Parmesan cheese over the peppers.
Step 7
Bake in the preheated oven for 1 hour and 20 minutes, basting the peppers with the sauce several times. The beef should reach an internal temperature of at least 70°C (160°F).
