Step 1
Preheat the oven to 175°C (350°F). Grease and flour two 20x10 cm (8x4 inch) loaf pans.

In a large bowl, sift together the flour, baking soda, cinnamon, and salt. Make a well in the center.

In a separate bowl, whisk together the eggs, butter, sugar, and vanilla extract. Fold in the mango, coconut, and walnuts. Pour this mixture into the well in the flour mixture and stir to combine. Pour the batter into the prepared loaf pans and let it sit at room temperature for 20 minutes.
Step 4
Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
