Ingredients

8 slices bacon
24 baby red potatoes
2 tbsp olive oil, or as needed
Cracked black pepper, to taste
80 ml Caesar salad dressing
4 green onions, diced

Directions

Step 1
Preheat the oven to 200°C (400°F).
Step 2
In a large skillet, cook the bacon over medium-high heat until evenly browned, about 10 minutes. Drain on paper towels and crumble.

Place the potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low and simmer until slightly tender, about 8 minutes. Drain and transfer the potatoes to a baking dish. Drizzle olive oil over the potatoes and season with black pepper.

Bake in the preheated oven until tender, about 10 minutes.

In a bowl, mix the potatoes, bacon bits, Caesar salad dressing, and green onions together. Serve warm.
