Watermelon Chill Sorbet

Ingredients

8 cups (1.8 kg) cubed seeded watermelon
2 medium limes (zested and juiced, divided)
2 tablespoons honey
1 pinch of chili-lime seasoning (such as Tajin®)

Directions

Step 1
Spread the watermelon cubes in a single layer on a sheet pan and freeze for at least 5 hours or overnight.
Step 2
Zest the limes and set the zest aside for garnish. Juice the limes to get 2 tablespoons of juice.
Step 3
In a food processor, blend half of the watermelon cubes with 1 tablespoon of honey and 1 tablespoon of lime juice until smooth and creamy. Transfer to a large bowl. Repeat the process with the remaining watermelon, honey, and lime juice.
Step 4
Combine the two batches, stirring well, and serve immediately, garnished with lime zest and Tajin®. Alternatively, transfer the sorbet to a freezer-safe container and freeze for a firmer texture.
