10 ml white balsamic vinegar
2.5 g kosher salt
120 g arugula
120 g baby spinach leaves
120 g thinly sliced red onion
150 g grape tomatoes, halved
60 g crumbled feta cheese
300 g bite-sized watermelon chunks
Step 1
In a small bowl, whisk together the olive oil, white balsamic vinegar, and salt. Set aside.
Step 2
In a large salad bowl, combine the arugula, spinach, red onions, and grape tomatoes. Drizzle the vinaigrette over the salad mixture and toss to coat. Add the feta cheese and watermelon, then serve.
