Start by gathering the ingredients.

In a blender or food processor, combine the lentils and water, and let them soak for at least 3 hours.

Blend the lentils until smooth, then season with salt. For best results, refrigerate the batter overnight, but you can use it immediately if needed.

To cook the flatbreads, heat a non-stick pan over medium-high heat. Lightly grease it with olive oil and allow it to get hot. Pour 1/4 to 1/3 cup of batter into the pan.

Use the bottom of a ladle or spoon to spread the batter into a 5 or 6 inch circle. Reduce the heat to medium and adjust as needed. Cook the first side for about 1 1/2 to 2 minutes before flipping it over.

Cook the second side for about 2 minutes, then transfer the flatbread to a plate. Keep the flatbreads warm by covering them with a towel while cooking and stacking.
