1 lime, halved crosswise
3 slices fresh ginger, plus extra for garnish
1 sprig fresh mint
Ice
60 ml purchased carrot juice
30 ml silver tequila
15 ml chile liqueur or Ancho Syrup (see recipe below)
45 ml ginger beer
Step 1
Cut 1 lime half into 4 pieces and place them in a cocktail shaker with the ginger and mint sprig. Muddle the mixture for about 1 minute until well combined, crushed, and juicy.
Step 2
Fill the cocktail shaker halfway with ice. Add the carrot juice, tequila, and chile liqueur to the shaker. Cover and shake until the outside of the shaker is frosted, about 60 seconds. Strain the mixture into an ice-filled cocktail glass and top with ginger beer. Cut a lime wheel from the remaining lime half and use it to garnish the cocktail along with ginger slices.
