Step 1
Start by washing the lemons and using a vegetable peeler to remove the zest. Set the peeled lemons aside. Place the lemon zest in a bowl and cover it with sugar. Toss to combine, then cover and let it sit for at least 2 hours, or overnight if possible.

Next, bring the water to a boil in a pot over high heat. Once it boils, turn off the heat and pour in the lemon-sugar mixture. Stir and allow it to sit until the sugar completely dissolves, about 5 minutes.
Step 3
Pour the mixture through a mesh strainer back into the same bowl, discarding the zest. Let it cool to room temperature, which should take 20 to 30 minutes.

Cut the lemons in half and squeeze the juice into the bowl. Transfer the lemonade to a serving pitcher, cover it, and chill thoroughly before serving over ice, ideally for at least 2 hours.
