Ingredients

1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 (10 oz) packages frozen broccoli, thawed
1 potato, peeled and chopped
4 cups chicken broth
0.25 tsp ground nutmeg
salt, to taste
pepper, to taste

Directions

In a large saucepan, heat the olive oil over medium heat. Sauté onion and garlic until tender.

Add broccoli, potato, and chicken broth to the saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes or until vegetables are tender.

With a hand blender or in a blender, puree the mixture until smooth. Return to the saucepan, reheat, and season with nutmeg, salt, and pepper.
