Ingredients

1 (15 oz) can pumpkin puree
1 ⅔ cups white sugar
1 cup vegetable oil
4 large eggs
2 cups all-purpose flour
2 tsp ground cinnamon
2 tsp baking powder
1 tsp baking soda
1 tsp salt
½ cup butter, softened
1 (3 oz) package cream cheese, softened
1 tsp vanilla extract
2 cups confectioners' sugar

Directions

1

Preheat your oven to 350°F (175°C).

2

In a medium bowl, use an electric mixer to combine the pumpkin puree, sugar, oil, and eggs until well mixed.

3

In a separate bowl, sift together the flour, cinnamon, baking powder, baking soda, and salt.

4

Stir the dry ingredients into the pumpkin mixture until fully combined.

5

Spread the batter evenly into an ungreased 10x15-inch jelly roll pan.

6

Bake until the cake is ready - it should bounce back when gently pressed, which will take about 25 to 30 minutes. Remove from the oven and let cool.

7

While the cake is cooling, prepare the frosting: In a bowl, beat together the butter and cream cheese until smooth. Add the vanilla, then gradually mix in the confectioners' sugar until the mixture is smooth.

8

Spread the frosting evenly on top of the cooled cake. Cut into 24 squares and serve!
