Ingredients

1 cup white sugar
1/2 cup shortening
1/2 cup milk
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 very ripe banana, mashed
1/2 cup chopped walnuts
1 tsp lemon juice
2 cups confectioners' sugar
1/2 ripe banana
2 tbsp butter, melted
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp lemon juice

Directions

1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.

2

In a large bowl, cream together the sugar and shortening until smooth. Stir in the milk and 1 tsp vanilla.

3

In another bowl, mix the flour, baking soda, and 1/2 tsp salt. Gradually incorporate this mixture into the sugar mixture.

4

Stir in the mashed banana, walnuts, and 1 tsp lemon juice. Pour this batter evenly into the prepared pan.

5

Bake until a toothpick inserted in the center comes out clean – about 25 to 30 minutes.

6

Allow the bars to cool in the pan on a wire rack.

7

For the frosting, beat together confectioners' sugar, 1/2 ripe banana, melted butter, 1 tsp vanilla, 1/2 tsp salt, and 1/4 tsp lemon juice in a medium bowl using an electric mixer until smooth.

8

Spread the frosting over the cooled bars, then cut into squares.
