Ingredients

2 cups white sugar
1 cup unsalted butter, softened
2 cups grated sweet potato
1.5 cups all-purpose flour
1 cup chopped pecans
4 large eggs
2 tsp vanilla extract
1 tsp salt
1 cup confectioners' sugar
2 tbsp melted butter
1-3 tbsp milk

Preheat the oven to 350°F (175°C). Grease a 10x13-inch baking dish.

In a large bowl, cream together sugar and butter using an electric mixer until smooth. Gradually add sweet potato, flour, pecans, eggs, vanilla, and salt, mixing well after each addition until the batter is smooth.
