Ingredients

6 cups diced cucumbers
4 roma (plum) tomatoes, seeded and diced
5 green onions, sliced
1 red bell pepper, seeded and diced
0.33 cup chopped garlic
1 cup fresh parsley, chopped
0.5 cup minced fresh mint leaves
0.5 cup olive oil
2 tbsp fresh lemon juice
1 tbsp salt
1 tbsp ground black pepper
