Ingredients

1 head cauliflower, chopped into bite-sized pieces
2 Tbsp olive oil
1 Tbsp garlic granules
1 1/2 tsp smoked paprika
1/2 tsp salt, or to taste
1/4 tsp white pepper
1/2 tsp cayenne pepper, optional
3/4 cup mayonnaise
1 1/2 Tbsp soy sauce
1/2 tsp onion powder
1 tsp sesame oil
1/4 cup sweet Thai chili sauce
1 Tbsp sriracha, or to taste
1/4 tsp sesame seeds, optional
1 or 2 Tbsp fresh snipped chives, optional

Preheat the oven to 230°C (450°F) and line a 30x60cm sheet pan with aluminum foil.

Toss cauliflower pieces with olive oil in a large bowl. Arrange them on the prepared pan in a single layer.

In a small bowl, mix garlic granules, smoked paprika, cayenne pepper, salt, and white pepper. Sprinkle the mixture evenly over cauliflower pieces.

Bake in the center of the preheated oven for 10-15 minutes until just tender.

Meanwhile, prepare the sauce: combine mayonnaise, sweet Thai chili sauce, soy sauce, sesame oil, sriracha, and onion powder in a small bowl. Drizzle about half of the sauce over the cauliflower pieces; set the remaining sauce aside for serving.

After baking, stir the cauliflower and continue baking for another 10 minutes or until desired doneness is achieved.

Garnish with sesame seeds and fresh snipped chives. Serve immediately with reserved sauce.
