Ingredients

2 cups uncooked sushi rice
3 cups water
0.5 cup rice vinegar
1 tablespoon vegetable oil
0.25 cup white sugar
1 teaspoon salt

Directions

Rinse the sushi rice in a strainer or colander under cold running water until it runs clear.

In a saucepan over medium-high heat, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and cook until the rice is tender and all water has been absorbed (about 20 minutes). Remove from heat and let it cool until it's ready to handle.

While the rice cooks, prepare the seasoning by combining the rice vinegar, oil, sugar, and salt in a small saucepan over medium heat. Cook until the sugar dissolves. Allow it to cool, then mix into the cooked rice. Though initially wet-looking, keep stirring as the rice dries with cooling.
