Ingredients

1 lb ground beef
1 onion, chopped
1 garlic clove, minced
1 packet taco seasoning
2 cups cheddar, grated
1 pack of 10 flour tortillas
1 Qt vegetable oil

In a skillet, heat 1 tablespoon of oil over medium heat. Add onion and garlic; cook and stir for 1 to 2 minutes. Add beef and taco seasoning, cooking until the beef is brown and crumbly (about 5 minutes). Drain extra liquid from the skillet.

In a large skillet, heat oil over low heat.

While that's happening, create the stuffed tortillas: Spread a teaspoon of queso sauce onto a tortilla (optional but tasty). Add 1/4 cup of the cooked beef mixture in the center and top with 2 tablespoons of cheese. Roll up the tortilla tightly and secure it with a toothpick. Repeat this process with the remaining ingredients.

Carefully place the rolled-up tortillas into the hot oil. Fry until golden brown (2 to 3 minutes).
