Ingredients

2 (8 oz) center-cut salmon fillets, with skin
0.25 tsp kosher salt
1 tsp vegetable oil
1 clove garlic, sliced
1 tbsp chopped fresh tarragon
1 tbsp chopped fresh basil
3 tbsp mayonnaise
1 tsp Dijon mustard
1 tsp fresh lemon juice
1 pinch cayenne pepper

Directions

1

Season salmon fillets with kosher salt. Line a baking sheet with foil and brush lightly with vegetable oil.

2

Preheat the oven's broiler to high and set the oven rack about 8 inches from the heat source.

3

In a small bowl, mix garlic, tarragon, and basil. Then process this mixture in a blender or mortar and pestle until it forms a loose paste.

4

Add mayonnaise, Dijon mustard, lemon juice, and cayenne pepper to the herb paste. Mix thoroughly.

5

Place salmon fillets, skin-side-down, on the baking sheet. Spread the herb mixture over the top and sides of each fillet.

6

Cook under the preheated broiler until fillets are well-browned, about 5 minutes. Turn the broiler off and turn the oven to 350°F (175°C).

7

Bake until the internal temperature of salmon reaches 130°F (55°C) and it flakes easily with a fork, about 3 to 4 minutes.
