Cut the potatoes into thick fries. Submerge the cut fries in a bowl of water and soak for 30 minutes.
Preheat the air fryer to 180°C (356°F) according to the manufacturer's instructions.
Drain the fries, then pat them dry with paper towels. Place the fries in a resealable plastic bag. Add oil, 1 tablespoon of Sriracha and salt. Seal the bag and shake to coat evenly.
Carefully arrange the fries in a single layer at the bottom of the air fryer basket without stacking them. You may need to cook in batches.
Air-fry until crispy and golden brown for about 13 minutes.
Transfer the cooked fries to a wire rack placed over a lined baking sheet and keep them warm in the preheated oven while you cook the remaining fries. Repeat with any leftover fries.
Once all the fries are cooked, arrange them on a serving platter and drizzle with the remaining Sriracha. Serve immediately and enjoy!
