Heat a large skillet over medium heat.
In a small bowl, combine butter, parsley, Pecorino Romano cheese, and garlic.
Butter one side of each bread slice with the mixture; flip. Top 2 bread slices with provolone and mozzarella cheese, then place remaining 2 buttered-sides up on top.
Cook for 3 to 4 minutes until golden brown on one side. Flip and continue cooking for another 3 to 4 minutes until the cheese is melted and golden brown on the second side.
