In a medium bowl, mix together the potatoes, cheese, beaten egg, and salt until well combined. If the mixture seems too wet, gradually stir in some flour to reach a consistent texture.
Melt the butter on a large griddle over medium heat.
For each pancake, drop 1/4 cup of the potato mixture onto the hot griddle.
Using the back of a spatula, flatten each pancake to about 1/2-inch thickness.
