Ingredients

2 cups mashed potatoes
0.25 cup shredded Cheddar cheese
1 large egg, beaten
1 tsp salt
1 tbsp butter
0.5 cup all-purpose flour (plus extra if needed)

Directions

1

Gather all ingredients.

2

In a medium bowl, mix together the potatoes, cheese, beaten egg, and salt until well combined. If the mixture seems too wet, gradually stir in some flour to reach a consistent texture.

3

Melt the butter on a large griddle over medium heat.

4

For each pancake, drop 1/4 cup of the potato mixture onto the hot griddle.

5

Using the back of a spatula, flatten each pancake to about 1/2-inch thickness.

6

Fry for around 5 minutes per side until they're golden brown and crispy.

7

Serve immediately.
