Ingredients

2 lb. ground beef
2 cups finely chopped yellow onion
1 cup finely chopped green bell pepper
3 tbsp. tomato paste
2 cups beef broth
1 1/2 cups ketchup
3 tbsp. yellow mustard
2 tbsp. Worcestershire sauce
2 tbsp. packed light brown sugar
1 tsp. garlic powder
1/2 tsp. black pepper
2 (8.5-ounce) pkgs. corn muffin mix (such as Jiffy)
2/3 cup whole milk
1 1/2 tsp. baking powder
2 large eggs

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

In a large skillet, cook the ground beef over medium-high heat until almost browned, about 4 minutes. Add the onion and bell pepper; cook until softened, around 6 to 8 minutes. Stir in the tomato paste and continue cooking for 2 minutes. Next, add the beef broth, ketchup, mustard, Worcestershire sauce, sugar, garlic powder, and black pepper. Bring to a boil, let it thicken and bubble for about 7 minutes, then remove from heat.

Transfer the sloppy Joe mixture to the prepared baking dish.

In a bowl, whisk together the corn muffin mix, milk, baking powder, and eggs until combined. Spoon this mixture evenly over the sloppy Joe filling.

Bake for 20 to 25 minutes until the cornbread turns golden brown and a toothpick inserted in the center comes out clean.
