Ingredients

25 g butter
50 g finely chopped onion
3 cloves garlic, minced
25 g all-purpose flour
750 ml low-sodium chicken broth
900 g chopped broccoli
1 medium carrot, julienned
1 (227 g) package cheese tortellini
0.5 tsp salt
0.25 tsp freshly ground black pepper
0.25 tsp smoked paprika
0.25 tsp turmeric
120 ml heavy whipping cream
1 cup (96 g) shredded Colby cheese

Melt butter in a Dutch oven over medium-high heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.

Sprinkle flour over the onion-garlic mixture. Stir to combine until flour is incorporated.

Slowly pour in chicken broth, stirring to combine. Add broccoli, carrot, and tortellini. Season with salt, pepper, paprika, and turmeric. Stir to combine and reduce heat to medium.
