Ingredients

1 1/2 cups whole milk
4 (10 oz) boxes frozen chopped spinach, thawed and squeezed dry; reserve 1/2 cup liquid
3 large garlic cloves, minced
2 tbsp butter
3 tbsp all-purpose flour
1/2 cup grated Parmesan cheese
1/2 tsp ground nutmeg
Salt and black pepper

Combine milk, 1/2 cup spinach liquid, and garlic in a microwave-safe measuring cup or small bowl. Microwave on high until very hot and steamy, about 2 minutes. Let stand for 5 to 10 minutes until garlic softened.

Melt butter in a large skillet over medium-high heat. Whisk in flour. Add hot milk mixture all at once; whisk until smooth. Stir in spinach; cook until sauce thick and bubbly and spinach is tender but still green, about 5 minutes. Stir in Parmesan cheese, nutmeg, salt, and black pepper.

Cover the skillet with a lid and let the spinach sit off the heat for 2 to 3 minutes until flavors meld. Serve hot.
