Ingredients

2 pounds potatoes, peeled and halved
1 cup milk
1 bunch green onions, thinly sliced
0.25 cup butter, cut into pieces
0.5 teaspoon salt, or to taste
freshly ground black pepper, to taste

In a large pot, cover the potatoes with salted water and bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.

Drain the potatoes well, then return them to the pot. Cover with a clean dish towel and place the pot over low heat for 2 to 3 minutes until the potatoes are dry.

Meanwhile, in a saucepan, warm up the milk and green onions on medium-low heat for 3 to 4 minutes.
