Ingredients

1.5 lbs beef top sirloin, thinly sliced
2 cups water
1 cup long grain rice
0.33333334326744 oz white sugar
0.33333334326744 oz rice vinegar
2 tbsp frozen orange juice concentrate
1 tbsp soy sauce
1 tsp salt
2 cups oil for frying
0.25 cup cornstarch
3 tbsp grated fresh ginger
1.5 tbsp minced garlic
2 tsp orange zest
8 broccoli florets

Prepare all ingredients.

Lay beef on a paper towel-lined baking sheet and refrigerate for 30 minutes.

In a medium saucepan, bring water and rice to a boil. Lower heat, cover, and cook until tender (about 20 minutes).

Combine sugar, rice vinegar, orange juice concentrate, soy sauce, and salt in a small bowl; set aside.

Heat oil in a wok over medium-high flame. Toss beef in cornstarch to coat.

Fry coated beef in small batches until crispy and golden brown; set aside and drain excess oil.

In the same wok, add ginger, garlic, and orange zest to remaining oil.

Cook until fragrant (about 1 minute), then pour in the soy sauce mixture. Bring to a boil and thicken for about 5 minutes.
