Ingredients

2 tsp olive oil
1.5 lb ground beef (85% lean)
1 cup diced yellow onions
1 tsp salt, plus more to taste
2 bay leaves
2 tsp cumin
0.5 tsp freshly ground black pepper
0.5 tsp ground cinnamon
0.25 tsp cayenne pepper
4 cloves garlic, minced
3 cups crushed tomatoes
0.25 cup water
3 tbsp red-wine vinegar
0.25 cup currants or raisins
0.5 cup sliced pimiento-stuffed green olives, or to taste

Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up into small pieces with a spoon or spatula, until fully cooked, about 8 to 10 minutes.

Add onion and salt; cook until the onion turns translucent, approximately 5 minutes.

Add bay leaves, cumin, black pepper, cinnamon, and cayenne pepper; cook for 2 minutes.

Add garlic; cook for 1 minute.

Stir in crushed tomatoes, water, and red wine vinegar. Cook and deglaze the pan, about 3 minutes.

Add currants; bring to a simmer.

Reduce heat to medium-low, cover, and let it cook until beef is tender, about 15 to 20 minutes.

Gently stir in sliced olives, cover, and cook for an additional 10 to 15 minutes.
