1 (3 in) cinnamon stick
1 cup uncooked jasmine rice
0.75 cup water
0.75 cup light coconut milk
1 tsp white sugar
0.5 tsp kosher salt
0.25 tsp grated lime zest
0.125 tsp ground white pepper
0.25 cup shredded unsweetened coconut, toasted
