1 cup fresh raspberries
1 cup fresh blackberries, halved
1 cup fresh strawberries, hulled and quartered
0.25 cup white sugar
1 teaspoon lemon zest
1 teaspoon freshly squeezed lemon juice
1 cup chilled heavy cream
0.25 cup creme fraiche
1 tablespoon white sugar
0.25 teaspoon pure vanilla extract
1 cup crushed shortbread cookies

In a bowl, combine raspberries, blackberries, strawberries, 1/4 cup sugar, lemon zest, and lemon juice. Stir until the sugar is mixed with berries and juices begin to form. Cover the bowl and refrigerate for about 1 hour.

In a cold bowl, mix heavy cream, crème fraîche, 1 tablespoon sugar, and vanilla extract. Whisk until soft peaks and sharp lines appear, which may take 5 to 8 minutes.

For assembly, place some cookie crumbs at the bottom of each serving dish. Top with a spoonful of macerated berries followed by a layer of whipped cream. Repeat layers until dishes are filled, ending with a sprinkle of cookie crumbs.
