1 green plantain
5 tablespoons oil for frying
3 cups cold water
salt, to taste

Peel and slice the plantain into 1-inch pieces. Immerse the slices in a bowl of cold water.

In a large deep skillet, heat oil over medium-high flames. Lay plantain slices evenly, fry on both sides until golden brown (about 3 1/2 mins per side). Set aside the skillet.

Transfer fried plantain slices to a chopping board and flatten each with a small plate, press gently.

Dip flattened slices in cold water. Reheat oil in the skillet over medium heat and cook plantains for 1 min on both sides.
