In a mixing bowl, combine 2 cups sugar, flour, eggs, melted butter, and vanilla extract. Stir until you have a smooth batter. Pour half of the batter into the prepared pan.
Bake until the crust turns golden, about 20-25 minutes.
While the crust bakes, toss nectarine slices with the remaining 1/4 cup sugar. Arrange the fruit over the base layer.
Spoon the remaining batter on top of the fruit. Bake until the cobbler is golden and the fruit is bubbly, about 28-35 minutes.
Optional: Preheat an air fryer to 400°F (200°C). Place the cobbler in the air fryer until the top is crunchy, approximately 5 minutes.
