In a bowl, combine apples, 1/4 cup rice flour, white sugar, and cinnamon. Transfer the mixture to an 8-inch baking dish.
In the same bowl, mix brown sugar, butter, 1/2 cup rice flour, quinoa flakes, and rice flakes. Sprinkle the crumble topping over the apple mixture and gently pat it down.
Bake until apples are tender and topping is slightly browned for about 35 minutes.
