Preheat your oven to 325°F (165°C). Grease and flour two 8x4-inch loaf pans.
In a large bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon.
In another large bowl, beat the eggs, oil, sugar, and vanilla together using an electric mixer until combined. Add the flour mixture and beat well.
Stir in the zucchini and walnuts until well combined.
Pour the batter into the prepared pans.
Bake for 40 to 60 minutes or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pans on a wire rack for about 20 minutes.
Gently loosen the edges with a table knife, then invert carefully onto a wire rack to let it cool completely.
