Ingredients

2 lbs skinless, boneless chicken thighs, cut into bite-sized pieces
1/4 cup fresh curry leaves, chopped
1 cup yogurt
1 tbsp grated garlic
1 tbsp grated ginger
2 tbsp chili powder
1 tbsp turmeric
1 tbsp garam masala
1 tbsp ground coriander
2 cups vegetable oil for frying
1/4 cup cornstarch
1/4 cup rice flour

In a large bowl, mix together the chicken, curry leaves, yogurt, garlic, ginger, chili powder, turmeric, garam masala, salt, coriander, cardamom, and black pepper. Cover and refrigerate for at least 2 hours or up to overnight.

Just before frying, stir in the cornstarch and rice flour to the chicken mixture.

In a deep pan, heat the vegetable oil over medium heat. Carefully add the chicken pieces and chili peppers in batches, and fry until golden and crispy for about 5 minutes. Keep an eye on them, stirring frequently.

Once done, transfer the chicken to a paper towel-lined plate to drain excess oil. Repeat this with the remaining chicken pieces.
