A refreshing soup with perfectly seasoned chicken, hominy, and a zesty twist of lime and cilantro for hot evenings.
In a large pot over medium heat, warm the canola oil. Stir in the ground cumin and paprika until fragrant for about 1 minute.
Add chicken broth, hominy, chopped chicken, diced tomatoes and their juice, water, green onions, lime juice, and hot sauce. Bring to a boil, then reduce heat and let it simmer for around 15 minutes until flavors meld together.
Just before serving, top the soup with fresh cilantro.
