Ingredients

1 tbsp canola oil
2 tsp ground cumin
1 tsp paprika
49.5 fl oz chicken broth
29 oz canned hominy, undrained
4 cooked skinless boneless chicken thighs, chopped
14.5 oz canned diced tomatoes in juice
14.5 oz water
6 green onions, sliced
1 lime, juiced
1 dash hot sauce
1 cup fresh cilantro, chopped

Directions

In a large pot over medium heat, warm the canola oil. Stir in the ground cumin and paprika until fragrant for about 1 minute.

Add chicken broth, hominy, chopped chicken, diced tomatoes and their juice, water, green onions, lime juice, and hot sauce. Bring to a boil, then reduce heat and let it simmer for around 15 minutes until flavors meld together.

Just before serving, top the soup with fresh cilantro.
