Ingredients

1 cup boiling water
0.5 cup kosher salt
0.5 cup molasses
4 whole cloves
1 tsp ground cumin
7 cups cold water
4 (2 1/4 inch thick) center cut, bone-in pork chops
0.5 tsp vegetable oil

Directions

In a large container, combine boiling water, salt, molasses, cloves, and cumin until dissolved. Let it cool to room temperature.

Add cold water to the molasses brine mixture; stir well.

Submerge pork chops in the brine completely. Cover and refrigerate for 6 hours.

Remove chops from brine, pat dry with paper towels, and lightly oil each side. Discard brine.

Preheat an outdoor grill or a stovetop skillet over medium-high heat; lightly oil the surface.

Grill pork chops on high heat for 2-3 minutes per side until golden brown. Then, move to medium-high heat and cook for another 6-8 minutes per side until slightly pink in the middle (use a thermometer to check for 63°C/145°F).
