0.5 onion, diced
pinch of salt
8 oz spicy Italian sausages, casings removed
3.5 cups low-sodium chicken broth, or as needed
1.25 cups orecchiette pasta, or more to taste
0.5 cup roughly chopped arugula, or to taste
0.25 cup finely grated Parmigiano-Reggiano cheese, or to taste

In a large, deep skillet over medium heat, warm the olive oil. Add the diced onion and a pinch of salt; cook and stir until the onion softens and becomes translucent – about 5 minutes.

Insert the sausage, cooking until it browns (5 to 7 minutes).

Pour in 1.5 cups of chicken broth and bring it to a boil while deglazing the pan with a wooden spoon. Scrape off any browned bits that you come across.

Introduce the orecchiette pasta into the skillet, cooking and stirring it in the hot broth until it's done and most of the liquid is absorbed (around 15 minutes), adding more broth as needed.

Incorporate the chopped arugula, allowing it to wilt in the sausage-pasta mixture.
