Ingredients

1 (360 ml) can thawed orange juice concentrate
1 orange, sliced
1 lemon, sliced
1 lime, sliced
1 tbsp dried thyme
1 tbsp ground black pepper
3 cloves garlic
2 bay leaves
1 cup (240 g) kosher salt
1.5 gallons (5.7 L) water

In a large stockpot, combine the orange juice concentrate, orange slices, lemon slices, lime slices, dried thyme, ground black pepper, garlic, bay leaves, kosher salt, and water; bring to a boil. Remove from heat and let it cool to room temperature.

Clean and pat dry your turkey, removing the innards. Place the turkey, breast-side down, into the brine ensuring the cavity is filled as well. Put the stockpot in the refrigerator. For optimal results, marinate the turkey for 8 to 48 hours before cooking.

Note: To enhance the orange flavor, consider adding an extra orange or two to the brine.
