Preheat the oven to 425°F (220°C). Spray a 10-cup muffin tin with cooking spray.
Flatten each biscuit between your hands and press it into the bottom and up the sides of each muffin cup. Allow the dough to settle and slightly rise for about 5 minutes; gently press down on the dough if needed.
Spoon 1 tablespoon of pizza sauce, followed by a slice of pepperoni, then 1 tablespoon of mozzarella cheese into each cup.
Bake until golden brown and the cheese has melted, approximately 10 minutes. Remove the pizza bites from the tin and let them cool on a wire rack for about 5 minutes.
