Ingredients

1 (9 inch) baked pie shell
0.75 cup dark amber real maple syrup
2.25 cups heavy cream
4 egg yolks
1 egg
1 tsp salt
1 tsp vanilla extract
1 tsp distilled white vinegar

Preheat the oven to 300°F (150°C). Line a large, shallow baking pan with foil; place the pie crust in its plate on the prepared pan.

In a heavy saucepan over medium heat, bring the maple syrup to a boil. Cook until reduced by about one-fourth, 5 to 7 minutes. Stir in cream and bring to a simmer before removing from heat.

In a large bowl, whisk together egg yolks and egg. Gradually, add the cream mixture (about 1/4 cup at a time) to the eggs, constantly whisking. Add salt, vanilla extract, and vinegar; mix well. Pour this mixture into the pie crust.

Bake until the pie is mostly set but still jiggles slightly when moved, approximately 1 hour. Let it cool before serving.
