Cook juicy and tender chicken breasts in a sizzling cast iron skillet, flavored with a delicious herb butter.
Prep all ingredients.
Season chicken with Italian seasoning, salt, smoked paprika, and black pepper.
Heat oil in a large cast-iron skillet over medium heat until shimmering. Add the chicken, rounded side down, and cook without moving for 4 to 5 minutes until the bottom is browned.
Flip the chicken and continue cooking undisturbed for another 4 to 5 minutes until the other side is browned.
Add butter, garlic, thyme, and rosemary, and cook until butter has melted, about 1 minute.
Tilt the pan so the butter pools at one end and spoon the herb butter over the top of each chicken breast. Cook for 3 to 5 minutes more, or until a thermometer inserted into the thickest part of the breast reads 74 °C (165 °F).
Transfer chicken to a serving platter and let rest for 5 minutes. Serve with pan drippings and lemon wedges, if desired.
