Ingredients

1 lb beef stew meat
salt, black pepper to taste
0.5 cup chopped Spanish onion
2 cloves minced garlic
2 cups chopped red potatoes
1 (14.5 oz) can diced tomatoes
1 (12 oz) jar sofrito
0.5 cup pitted and halved green olives

In a large skillet, brown the beef over medium heat until fully cooked, about 5 minutes. Season with salt and black pepper; transfer to a slow cooker while reserving some drippings in the skillet.

Heat the retained drippings in the skillet and add the onion and garlic. Sauté until softened, around 5 minutes, then combine with the beef in the slow cooker.
