Ingredients

1 lb. ground chuck
1 cup chopped yellow onion
1 green bell pepper, chopped
1 1/4 cups lower-sodium chicken stock
1 (15 ounce) can red kidney beans, drained and rinsed
1 (15 ounce) can diced tomatoes, undrained
1 (15 ounce) can sweet whole kernel corn, drained
1 (1 ounce) envelope taco seasoning mix
1 canned chipotle chile in adobo sauce, finely chopped, + 1 tablespoon adobo sauce
8 ounce sharp Cheddar cheese, shredded (about 2 cups)
2 1/2 cups corn chips (such as Fritos®)

Directions

1

Preheat the oven to 350°F (175°C).

2

In a large skillet, cook ground chuck over medium-high heat until browned, breaking up meat with a wooden spoon. Add onion and bell pepper; cook, stirring often, until the beef is cooked through and onion is softened.

3

Stir in stock, kidney beans, diced tomatoes, corn, taco seasoning, chipotle chile, and adobo sauce. Bring to a boil over medium-high heat; reduce to medium and simmer, stirring occasionally, until slightly thickened (7-10 minutes). Remove from heat, then mix in 1 cup of Cheddar.

4

Transfer the beef mixture to a 9 x 13-inch baking dish. Top with remaining Cheddar and sprinkle corn chips evenly over the cheese.

5

Bake uncovered for 18-20 minutes until the mixture bubbles and the Cheddar is melted with a hint of browning. Let rest for 10 minutes before serving.

6

Garnish with sliced scallions, and serve with sour cream, guacamole, and salsa.
