Ingredients

1 tbsp extra-virgin olive oil
0.75 lb chorizo sausage, chopped
2 lbs ground chicken
1/4 cup chili powder
1 1/2 tbsp ground cumin
1 (15 oz) can black beans, drained
1 (15 oz) can white beans, drained
1 onion, chopped
1 red bell pepper, chopped
3 cloves garlic, finely chopped
1 (12 fl oz) can or bottle beer
1 (28 oz) can fire-roasted diced tomatoes, with juice
3 cups chicken stock
1 (6 oz) can tomato paste
salt, to taste

Heat olive oil in a large pot over medium-high heat. Add chorizo; cook until heated through, about 2 minutes. Transfer chorizo to a separate bowl. Increase heat to brown ground chicken, breaking it up as it cooks for 5 to 6 minutes. Season with chili powder and cumin.

Add chorizo, black beans, white beans, onion, bell pepper, garlic to the pot; cook until onion begins to soften, about 5 to 6 minutes. Pour in beer, bringing it to a simmer. Stir in tomatoes, chicken stock, and tomato paste. Simmer until heated through, about 5 minutes. Season with salt.

Reduce heat to low and let the chili simmer for around 30 minutes to allow flavors to meld together.
