Ingredients

2 large sweet potatoes
0.25 tsp salt or to taste
0.5 cup dark brown sugar
0.5 tsp ground cinnamon
0.25 tsp ground nutmeg
1 cup orange juice

Slice sweet potatoes lengthwise into halves, then cut each half into 1/4-inch slices; set aside.

Mix brown sugar, cinnamon, and nutmeg in a small bowl.

Add orange juice to the pressure cooker, then add the trivet and steamer basket with sweet potato slices on top. Sprinkle the brown sugar mixture over the sweet potatoes; dot with pieces of butter.

Lock the lid and bring the cooker up to full pressure (15 psi) over high heat as per manufacturer's instructions. Once reached, lower heat to simmer and cook for 7 minutes.

Release pressure according to manufacturer's instructions, and reserve cooking liquid. Carefully lift steamer basket from cooker, placing sweet potato slices into a serving dish.

Return cooker to stovetop; bring the reserved cooking liquid to a boil over high heat. Simmer, stirring often, until reduced, syrupy, and thick enough to coat the back of a spoon (about 5-7 minutes).
